The Commissary blend is currently pre-blended 50/50. This means the green seeds are blended before roasting. While a post-blend can provide more clarity and complexity, the idea behind this preblend is to get more uniformity and structure. The roasting of this coffee is designed for maximum extraction and cooked sweetness. We extend both the malliard and development phase, without going too dark or tipped. By drawing out this roast, we have a more balanced espresso that rings with sweetness and uniformity. Coffees that go in this blend are selected to play nice with each other and operate as a single unit. The Colombia ASOPAP provides plenty of chocolate with tropical overtones, while the Guatemala El Milagro provides chocolate with a maple syrup undertone. This type of strategy doesn't work for any two coffees, so we tend to choose ones that can be stable for a few months on end.
