Produced exclusively from Picholine variety olives grown in the Vallee des Baux-de-Provence, this extraordinary extra virgin olive oil is characteristically intense, sharp and bitter and is often used as a flavor enhancer. It is highly distinctive, bringing out the flavor of early-season vegetables, and works well with carpaccio of fish and tartare of ox with a dash of lemon juice. It is also the perfect oil for fish ceviche, sorbets, and ice creams. This medium-intensity extra virgin olive oil has notable aromas of tomato vine and olive leaf.
